We buy thai style meatballs and burgers from our local market but tonight we decided to try making our own as its much cheaper. The result? Perfect!

Here’s the recipe:

1 pack Pork mince (500g)

1cm piece of fresh ginger

2 cloves garlic

1-2 tsp very lazy chilli

Handful of fresh coriander, chopped.

Salt & pepper

 

Mix all the ingredients together really well and form into balls. We made 10 meatballs.

Oven bake for around 15 minutes.

Sauce

Jar of passata

1/2 – 1tsp very lazy chilli

1 clove garlic

A “good squeeze” of tomato  puree

Fresh coriander, chopped.

Bung it all in a pan and warm through. Pop cooked meatballs in the sauce and leave to simmer for 10-15 minutes.

We served ours with tagliatelle but would also go well with rice.

 

The recipe is all made up so its very much done to taste… feel free to play around with ingredients and let me know what you think!

The Great British Weather

I am getting so fed up with this crappy weather we are having! Today looks set to be another day of staying indoors hiding from the elements. Cabin fever comes to mind. I wouldnt mind as much if it was proper rain… at least we could go splashing in puddles! The hills round here look so miserable in this weather.

Katie is walking round looking for her big sister. She is really missing her. I have just sorted out her “Granny times” for the summer holidays and I have managed to keep it to just 2 weeks out of 6 so I’m happy with that. She will go the 1st week of the holidays and then the last week when she goes with them to Ireland. I just hope the weather improves! I am hoping for lots of picnics on the park and trips to Morecambe.

Technology

Robyn is away at her Grannys house at the moment in Northampton. She is away for a week, Saturday to Saturday. I’m missing her loads!

Last night while signed into MSN a video call came through from Robyns uncle. I answered it and within seconds I was having a live videochat with microphones with Robs! She was able to see Katie eating her dinner and speak to her. Katie was mesmerized and said “RO-RO!!!” to the screen.

It felt so good seeing my Robyn and being able to talk to her as though she was in the room with me. I love technology!

We work best when we meal plan but haven’t been doing it properly lately. I’ll probably use this blog to jot down the weekly meals so I know where I am.

This weeks (from yesterday):

Tues: Chilli con Carne

Wed: Chicken Fajitas

Thurs: Sausage, mash & onion gravy

Fri: Roast chicken portions & roast potatoes

Sat: Meatballs & Pasta

Sun: Undecided

The happiest day of my life

Well we made it to a year of wedded bliss!

We celebrated yesterday with a child free afternoon out in Manchester. Robyn is at her Grannys house for the week so after dropping Katie off at my mum & dads house we got on a train and in under an hour we were in the city centre.

We strolled round the shops without having to negotiate a buggy through crowds of people… what a delight! Funny how we still ended up buying clothes for the girls though!

Next it was off to the cinema but first we grabbed a drink of the alcoholic variety in the bar. We went and found our seats armed with popcorn and watched “21”… a good film!

Dinner was next… a chinese restaurant “YumYums”.  Eat as much as you like for £8.95 each. We made the most of it… well it would be rude not to!

Then we went back to the train station where we watched some silly lads trying to fight on the platform. We were entertained by the afore mentioned lads (who had at first appeared to be so full of it) turn into sheepish boys when the police were called and started taking all their details. It was really quite funny!

We were home at a very respectable time of 9pm (we must be getting old!) so we snuggled up together and watched some TV. It was a perfect day.

I’ve decided to keep a blog. I love reading other peoples… I have many in my internet favourites that I check daily and I realised I should probably make the effort myself!

So here I am. I’m Mel, married for 1 whole year tomorrow and rapidly approaching 30. Hopefully this is where memories will be stored & random thoughts jotted down. You never know if you keep reading you may even get a bit of an insight into my mind!
