Monday Morning

Not just any old Monday morning… its Robyn’s 1st day back at school after half term and day number 1 of my diet (again!).

This Wednesday is Ash Wednesday. In the past I’ve given up the usual chocolate, crisps and sweets etc for Lent but this year I’m going to try and use it to lose weight. Hopefully it will help me be more disciplined. Tomorrow I’m going to aquafit for the first time in ages. I stopped going when I was having problems with my sciatica. That is all better now (mostly… for the time being at least) so last night we sat and sorted all the bits out for our Sports centre discount card. Ours expired on Saturday, typical eh?!

Breakfast today was Fruit n Fibre, lunch will be a cup a soup with oatcakes. Not sure about dinner yet, I need to look in the freezer.  I’m going to cut bread out of my diet for a while. i managed it for a couple of weeks in October and noticed the difference in my weight.

I’ll do a weigh in later. I may or may not post the results of that here in my blog. Watch this space

Sundays…

I love Sundays. I think it is my favourite day of the week.

A typical Sunday for me goes like this:

  • Snooze in bed while the girls eat breakfast and play, get up and get ready slowly
  • Go to church with Robyn. Mum and dad are there too and its nice to get out to speak to people. (Katie doesnt come at the moment unless Daddy comes too, she is too much of a handful for me)
  • Come home from church where Anthony has often prepared a delicious roast dinner. Today was no exception… pot roast brisket with roasties and yorkshire puddings. Scrummy!
  • Watch family films (todays was “Matilda”) and rubbish TV while recovering from the roast dinner
  • Play with my girls and enjoy having them both at home together.
  • Baking. I often bake on a Sunday afternoon. My mum always used to when I was a child. This means the next thing on this list is extra good…
  • Sunday tea! Often egg mayo sandwiches feature on this menu, followed by the fruits of my labour in the baking department. Nothing beats freshly made cakes for Sunday tea!
  • Once the girls are in bed its time for TV again… currently its “Dancing on Ice” followed by “Wild at Heart”. Sunday night TV at its best!

Basically then its a mixture of relaxation, worship and family time… all very important things in my life. Lots of people I know find Sundays boring. How can that be?!

We buy thai style meatballs and burgers from our local market but tonight we decided to try making our own as its much cheaper. The result? Perfect!

Here’s the recipe:

1 pack Pork mince (500g)

1cm piece of fresh ginger

2 cloves garlic

1-2 tsp very lazy chilli

Handful of fresh coriander, chopped.

Salt & pepper

 

Mix all the ingredients together really well and form into balls. We made 10 meatballs.

Oven bake for around 15 minutes.

Sauce

Jar of passata

1/2 – 1tsp very lazy chilli

1 clove garlic

A “good squeeze” of tomato  puree

Fresh coriander, chopped.

Bung it all in a pan and warm through. Pop cooked meatballs in the sauce and leave to simmer for 10-15 minutes.

We served ours with tagliatelle but would also go well with rice.

 

The recipe is all made up so its very much done to taste… feel free to play around with ingredients and let me know what you think!

Dinner Time…

We work best when we meal plan but haven’t been doing it properly lately. I’ll probably use this blog to jot down the weekly meals so I know where I am.

Thurs: Sausage, mash & onion gravy

Fri: Roast chicken portions & roast potatoes
